Veggie Burger with Sweet Potato Chips

Burger buns 2 4
Chickpeas 200 gr 400 gr
Sweetcorn 150 gr 300 gr
Coriander ¼ bunch ½ bunch
Burger herb mix (paprika, cumin, coriander) ½ tbsp 1 tbsp
Lettuce ½ lettuce 1 lettuce
Tomato 1 2
Sweet potato 1-2 3-4
Potato herb mix (smoked paprika, polenta) 1 tbsp 2 tbsp
Garlic 2 cloves 4 cloves
*Flour (plain/self raising) 1.5 tbsp 3 tbsp
*Oil (Olive/vegetable/any) 2 tbsp 4 tbsp
*Tomato sauce To taste To taste

TOOLS: Frying pan, blender/nutribullet, oven tray, spatula/wooden spoon

METHOD

PREP & ROAST
Preheat oven to 210C ● cut potatoes (skin on) into 1.5cm thick chips ● finely chop garlic ● place garlic & chips into mixing bowl with 1 (2) tbsp of oil and potato herb mix, mix well ● line oven tray with baking paper & spread chips evenly ● roast  for 20-25 mins, turning a few times

PREP
Drain and rinse chickpeas & corn ● remove coriander leaves from stalks and put ½ aside ● place in food processor: coriander stalks, ½ of the coriander leaves, chickpeas, corn, burger spices, flour & S&P ● pulse to create a textured rather than smooth burger mix

FRY
Flour your hands, evenly split mixture into 2(4) balls, shape into 2cm thick patties ● heat fry pan with 1 (2) tbsp of oil  on medium heat ● gently add burger patties ● cook for 8-10mins, turning a few times to cook evenly

GRILL & PREP
Slice buns in the middle and dry fry (without oil) in a hot nonstick pan until toasted ● slice the tomatoes ● tear lettuce into burger sized pieces

BUILD & SERVE
Spread tomato sauce on inside of top bun piece ● place bottom burger bun on a plate, layer with lettuce, tomato, some coriander leaves and burger patty ●  finish off with placing top bun on top and a serve chips on the side
