Tomato, Cauliflower Lemon Koshari (GF)

Zaatar 1.5 tbsp 3 tbsp

TOOLS: Fry pan, 2 saucepans, spatula/ wooden spoon, paper towel, strainer

METHOD

PREP

Place brown rice in a saucepan and add 2 cups of water per cup of rice ● cover, bring to the boil, reduce to low and simmer for 25 minutes ● remove from heat and let rest for 5 minutes with lid on ● fluff with a fork

DICE & FRY                                                                                                                                                   

Dice onion ● place saucepan over medium heat with 2(4) tbsp of oil ● add onion and cook until dark and golden (around 10-12 minutes) stirring occasionally ● remove from pan and set aside on paper towel to drain

RINSE & COOK                                                                                                                                             

Cut cauliflower into small florets ● heat 1(2) tbsp of oil in a frypan over high heat ● fry cauliflower for 5 minutes until golden ● drain and rinse lentils ● add lentils to the cauliflower cook for 2 more minutes ● season with salt & pepper then place in a bowl and cover

PREP & COOK                                                                                                                                           

Finely mince garlic ● place fry pan on medium heat with 1(2)tbsp of oil ● add garlic, zaatar and tomatoes ● cook until tomatoes start to blister (around 2 minutes) ● add ½ a cup of water to the pan ● when water is almost evaporated add cauliflower mixture and heat through

FINISH & SERVE                                                                                                                                         

Slice spring onion in rings ● slice ½(1) lemon in rings ● squeeze the juice of the other ½(1) lemon over the cauliflower mixture ● place rice in a bowl and top with the cauliflower mixture and fried golden onions ● garnish with spring onion and slices of lemon
