Syrian Mujadara with Avocado and Lemon

TOOLS: Fry pan, saucepan, wooden spoon/ spatula, strainer, grater
METHOD

COOK
Place brown rice in a saucepan and add 4 cups of water per cup of rice ● cover, bring to the boil, reduce to low and simmer for 25 minutes ● remove from heat and drain

PREP
Slice onions in halve rings ● finely dice garlic ● halve avocado and slice lengthwise

FRY
Place fry pan on medium heat with 2(4) tbsp of oil ● fry onion until it starts to caramelize (5-6 minutes) ● remove half of the onion and set aside ● add garlic to the pan and cook for 1-2 minutes ● add spice mix and after 30 seconds add the lentils including the liquid in the can >>>

MIX
Make sure to heat the lentils for 2-3 minutes ● when rice is cooked and lentils are warm mix both together ● season with salt and pepper ● wilt the spinach through the lentil and rice mixture (around 1-2 minutes)

FINISH & SERVE
Place mujadara in bowls ● top with avocado and set aside caramelized onion ● zest the lemon over the top, then slice lemon into wedges and serve with the mujadara
