Roasted potato in tomato sauce with lime (GF)

TOOLS: Oven, oven tray, baking paper, tin foil, saucepan, wooden spoon, bowls

METHOD

PREP     

Preheat oven to 220C ● slice potatoes into 2cm thick rounds leaving skin on ● in a large bowl place: potatoes, syrup, 2(4) tbsp olive oil, half of the spice mix, salt and pepper ● mix and place on oven tray with baking paper ● cover with tin foil

COOK                                 

Place potatoes in oven and cook for 25 minutes ● then remove foil and cook for a further 10 minutes ● make sure to check the potatoes as the thickness of the potato can affect the cooking time

PREP                                   

Finely slice garlic, jalapeno, shallots and chilli (remove seeds for milder flavours) ● heat saucepan on low heat with 2(4) tbsp of oil ● place garlic, chilli and jalapenos in pan and slowly cook for 5-7 minutes without browning ●  move half of the chilli mix into a bowl

COOK                                   

Add shallots to the pan and cook for 3 minutes ●  add remaining spice mix, diced tomatoes, grated lime skin, 200 ml of water and salt & pepper ● bring to the boil then simmer for 5-7 minutes ● place cooked potatoes with browned side up in the sauce and let simmer for another 4 minutes

FINISH & SERVE             

Coarsely chop parsley and slice spring onion into thin rings ● mix the set aside chilli with 2(4) tbsp of oil, parsley, juice of ½(1) lime ● drizzle remaining lime juice over the potatoes ● taste and add salt and pepper if necessary ● place potatoes and sauce in bowl and garnish with dressing and spring onion
