‘Phish’ and Chips

Banana blossom in brine 1 can 2 cans
Nicola potato 300 gr 600 gr
Sparkling water 2/3 cup 1.5 cups
Lemon 2 3
Baby cucumber 30 gr 60 gr
Red onion 1/2 1
Turmeric 1 tsp 1 tsp
Flour 1.5 cups 3 cups
Vegan mayonnaise 100 gr 200 gr
Parsley 4 stalks 8 stalks
*Vegetable/ Sunflower oil 1.5 cups 2 cups
* Olive oil 1 tbsp 2 tbsp

TOOLS: 3 Bowls, oven, baking tray, baking paper, saucepan, Wisk, tongs

METHOD

CUT & BAKE                           

Preheat oven to 200C ● slice potatoes (skin on) into 1.5cm thick chips shapes ● mix chips in a bowl with olive oil and a pinch of salt ● place baking paper over oven tray and spread the chips evenly ● place  tray in oven for 10 min ● turn chips around and bake for another 20 minutes

DRAIN & MIX                     

Rinse and drain banana blossoms ● cut in 5 cm size pieces ● place 1/2(1) a cup of flour in a bowl, set aside ● place the remaining flour in a different bowl, mix this with turmeric, juice of ½(1) lemon, S&P and ¾ cup of sparkling water ● mix this till a smooth batter (cake mix thickness)

CUT & MIX                          

Dice onion and baby cucumber ● finely chop parsley ● mix all of these in a bowl with the mayonnaise leaving a bit of chopped parsley aside for garnish ● squeeze halve a lemon trough the sauce and mix everything

FRY                                      

Heat vegetable oil in a small saucepan on medium heat ● coat the banana blossom in flour then dip in batter ● carefully place the banana blossom in the hot oil ● work in small batches ● fry 3-4 minutes till golden flipping them once ● place fried ‘phish’ on kitchen paper

SERVE                                 

When the potato chips are cooked place them with the ‘phish’ and sauce in a bowl ● serve sauce on the side with some lemon wedges and sprinkle with the leftover parsley and some salt
