Pasta Salad with Tahini & Greens (GFO)

Pasta 160 gr 320 gr
Green beans 120 gr 240 gr
Spinach 1 handful 2 handfuls
Curry powder 1 tsp 2 tsp
Pine nuts 20 gr 40 gr
Chickpeas 400 gr 800 gr
Dill 2 stalks 4 stalks
Lemon 1 2
Tahini 30 gr 60 gr
*Olive oil 2 tbsp, 1 tsp 4 tbsp, 2 tsp

This delicious pasta salad with tahini & greens is beautiful in its flavors. The curry and tahini give this plant-based dish a well balanced taste. The citrus does give it the right amount of freshness that you are after.

TOOLS: 2Fry pans, 1 saucepan, mixing bowl, strainer, wooden spoon, kitchen paper

METHOD

PREP & COOK                    

Remove tops and tails from the beans ● slice beans in 1cm pieces ● bring a saucepan with water to the boil ● add salt and pasta ● cook for 5 minutes ● then add beans to the water and cook for 4 more minutes ● drain all under cold water and set aside

MIX                                     

Place into a bowl: tahini, zest and juice of ½(1) lemon, 1(2) tbsp of oil, 2(4) tbsp of warm water and a good pinch of S&P ● mix well and set aside

ROAST                                

place a small fry pan on medium heat ● add 1(2) tsp of oil and the pine nuts ● roast until golden ● drain on kitchen paper ● coarsely chop dill

COOK                                 

Place fry pan with 1(2) tbsp of oil on medium heat ● add curry powder and drained chickpeas to the pan ● roast chickpeas until crispy and golden (around 4-6 minutes) ● remove from heat

FINISH & SERVE                  

Add spinach to the fry pan and wilt for 1 minute ● add pasta and beans to the mixture ● mix dressing into the pan setting a little aside for serving ● season with S&P ● mix well ● place in bowls ● garnish with pine nuts, dill, a lemon slice and remaining dressing
