Noodle salad with kale, Green beans & hummus dressing

Noodles 120 gr 240 gr
Hummus 4 tbsp 8 tbsp
Peanut butter 1 tbsp 2 tbsp
Kale ¼ bunch ½ bunch
Green beans 100 gr 200 gr
Spring onion 4 stalks 8 stalks
Garlic 1 clove 2 cloves
Ginger 1 cm 2 cm
Chilli 1 2
Lime 1/2 1
Sesame seeds 1 tbsp 2 tbsp
Coriander ¼ bunch ½ bunch
*Soy sauce 2 tbsp 4 tbsp
*Oil 1 tbsp 2 tbsp

TOOLS: Mixing bowl, Whisk, 2 saucepans, fry pan, spatula

METHOD

DRESSING                            

Whisk 3 (6) tbsp of boiling water with peanut butter in a bowl to loosen it ● add hummus and lime juice ● mix well, add some more water if needed (the dressing should be easy to drizzle) ● season with salt & pepper

PREP                                    

Bring 2 saucepans with water and salt to the boil ●  remove kale stalks and shred kale into 3cm pieces ● finely chop garlic, ginger and chilli (leave some chilli rings aside for garnish) ● slice spring onion into 3cm pieces ● cut the tops and tails off the green beans

COOK                                    

Boil noodles in one of the saucepans until al dente (3-4 minutes) ● drain and rinse with cold water ● cook green beans in second saucepan for 3-4 minutes, add kale for last 30 seconds ● drain and rinse green beans and kale with cold water

FRY & MIX                            

Heat fry pan on medium heat with 1 (2) tbsp oil ● add garlic, ginger, chilli, sesame seeds and spring onion ● cook for 2-3 minutes until softened ● mix in the green beans, kale and noodles ● turn off heat ● add soy sauce and 1/3 of the dressing ● mix well

SERVE                             

Roughly chop coriander leaves ● place salad on a plate and drizzle with remaining dressing ● finish with chopped coriander leaves and chilli rings
