Middle Eastern Maftoul Salad

Exciting Middle Eastern dish! Full off green and goodness this vegan dish will definitely tingle your taste buds. The pearl couscous with broccolini, cucumber and nuts give a lovely light and rich set of flavors. Enjoy

TOOLS: Large sauce pan, frypan, bowl, wooden spoon

METHOD

SLICE & COOK 1                 

Slice onion into half rings ● mince garlic and chilli (remove seeds for less heat) ● place a large sauce pan with 4(8) tbsp of oil on medium heat ● add onion and cook for 5-7 minutes, add chilli, garlic and cook until onion starts to caramelize —–>

COOK 2                                

Wash and add pearl couscous, cook for 3 minutes then add 1.5(3) cups of boiling water, stock cube and raisins to the pan ● bring everything to a simmer for 15 minutes until couscous is cooked ● when cooked place in a bowl to cool down to room temperature

SLICE                                

Halve cucumber lengthwise and then slice into half rings ● thinly slice spring onion (set some aside for garnish) ● slice up broccolini including stems ● coarsely chop almonds

FRY & MIX                         

Place frypan on medium heat with 1(2) tbsp of olive oil ● fry broccoli for 3-4 minutes ● drizzle juice of ½(1) lemon over the pearl couscous ● mix in the cucumber, broccolini and spring onion ● taste and season with salt & pepper if required

FINISH & SERVE               

Place maftoul salad in bowls ● garnish with left over spring onion, almonds and zaatar
