Gochujang braised tofu with broccolini (GF)

Tofu 300 gr 600 gr
Rice 1 cup 2 cups
Broccolini 1 bunch 2 bunches
Ginger 1.5 cm 3 cm
Garlic 3 cloves 6 cloves
Gochujang paste 1.5 tsp 3 tsp
Sesame seeds 1 tsp 2 tsp
Spring onion 3 stalks 6 stalks
Pear 1 2
*Oil (Vegetable/Olive) 6 tbsp 12 tbsp
*Syrup (Maple/Agave) 1.5 tbsp 3 tbsp
*Soy sauce 2 tbsp 4 tbsp

TOOLS: Saucepan, 2 fry pans, grater, wooden spoon, bowl, paper Towel

METHOD

COOK
Place rice in a saucepan and add 1.5 cups of water per cup of rice ● cover, bring to the boil, reduce to low and simmer for 15 minutes ● remove from heat and let rest for 5 minutes with lid on ● fluff with a fork

PREP & MIX                                 

Mince garlic ● finely grate ginger and pear ● finely slice spring onion ● cut tofu into 1cm thick slices ● slice broccolini lengthwise in half ● mix in a bowl: pear, ginger, garlic, spring onion, syrup, soy sauce, gochujang paste, 1(2) tbsp of oil and 2(4) tbsp of water

FRY                                      

Place a large fry pan on medium heat with 4(8) tbsp of oil ● place tofu in the pan and fry until golden on both sides (around 8 minutes) ● remove from the pan and place tofu on a plate with paper towel to absorb the excess oil

REDUCE & FRY              

Remove excess oil from the fry pan and add the pear- gochujang mix ● bring to the boil then reduce heat and simmer for 5 minutes ● place second fry pan on high heat with 1(2) tbsp of oil ● when hot add broccolini and stir fry for 5 minutes ● add sesame seeds and S&P

FINISH & SERVE                 

Poor half of the sauce into a bowl ● top with the fried tofu and some more sauce ● garnish with broccolini and serve rice on the side
