Caesar Pasta Salad with Roasted Chickpeas

TOOLS: Blender/nutribullet, 2 mixing bowls, baking tray, spatula/wooden spoon

METHOD

PREP & ROAST
Preheat oven to 210C ● drain, rinse and pat dry chickpeas ● place chickpeas into bowl ● add 1(2)tsp olive oil, herb mix & salt and pepper, mix well ● spread mix evenly onto a baking tray lined with baking paper or oiled ● roast for 15 minutes or until golden

PREP & COOK
Place cashews into small bowl and cover with boiling water ● soak for 10 mins ● meanwhile bring salted water to the boil and cook pasta al dente (for 7-8 minutes ● drain and rinse under cold water

CHOP
Roughly chop lettuce into 2cm pieces ● halve the tomatoes ● roughly chop parsley leaves ● mix in a large bowl

BLEND
Place in blender: nutritional yeast,  garlic, lemon juice, mustard, salt & pepper, soaked cashews & half of the cashew water (set rest aside) ● blend until smooth ● to reduce thickness, add a little more cashew water, blend and repeat until reaching a dressing like consistency

MIX & SERVE
Add pasta to large mixing  bowl containing the salad along with ¾ of the roasted chickpeas, coat with dressing and mix well ● serve  and garnish with remaining chickpeas
