Black Bean Burger with Salsa and Carrot Chips

Delicious comfort food at its best. While the black beans are a perfect base for this Vegan burger the fresh and acidy tomato salsa gives this plant-based dish the freshness that it needs. The avocado and carrot chips are finishing of this tasteful dinner.

TOOLS: Oven, oven tray, baking paper, kitchen machine, fry pan, 2 bowls

METHOD

PREP                                       

Pre heat oven to 210C ● slice onion finely ● remove seeds from tomato and slice flesh into small cubes ● drain and rinse black beans ● mince garlic ● coarsely chop coriander (leaves & stalks) keeping one stalk aside ● chop chilli ● slice carrot into thick chip-sized matchsticks

MIX                                    

Place into kitchen machine: oats, peanuts & spice mix ● blitz for 15 seconds ● add 80% of the black beans, coriander, 80% of the onion, chilli, 1(2) tbsp of oil & a good pinch of salt ● blitz until mixed ● place mixture in a bowl and mix with remaining beans ● dived into 4(8) balls ● place in fridge

ROAST & MAKE SALSA        

Place carrots on an oven tray with baking paper and season with  S&P ● roast for 15-20 minutes in the oven, turn half way ● to make the salsa, place into a bowl: garlic, tomato cubes, remaining onion, leaves of remaining coriander stalk (finely sliced), 2(4) tbsp of oil and S&P

FRY                                      

Take bean mixture out of the fridge and turn into patties (use baking paper to avoid it sticking to the bench) ● season with S&P ● place fry pan on medium heat  with 1(2) tbsp of oil ● when hot fry patties for 4-5 minutes on each side ● remove patties from the pan and dry toast the burger buns for 2 mins

FINISH & SERVE                

Slice avocado into wedges ● place bottom of the burger bun onto a plate, place spinach on top ● drizzle some salsa and place  burger on top, top with more salsa and avocado slices ●  place burger bun on top and serve with chips on the side
